Filling
Step by step
- 1
In a food processor, add the flour, sugar, salt, and very cold butter. Process. Add the water and keep processing.

- 2
Turn out onto the counter and finish bringing the dough together, kneading as little as possible.

- 3
Wrap in plastic wrap and refrigerate for about one hour.

- 4
Cut the apples into slices and put them in a bowl, sprinkle cinnamon over the apples, and mix.

- 5
In a skillet, add the butter and flour and melt over medium heat until it turns light or slightly toasted in color.

- 6
Add the water and sugar, keep cooking for a few more minutes, then pour it over the apples.

- 7
Unwrap the dough and roll it out with a rolling pin, remembering to flour underneath and on top to keep it from sticking.

- 8
Transfer the rolled-out dough to the pan and press it in so it covers the entire bottom. (I recommend watching the video to learn the best technique)

- 9
Fill the pies with the apples we prepared at the beginning.

- 10
Roll out the remaining dough, cut it into strips, and use them to cover the pies.

- 11
In a small bowl, add an egg, milk, sugar, and salt. Mix.

- 12
Brush the pies with this mixture.

- 13
Bake at 180°C (350°F) for 35 minutes.
