Chocolate Twist Ring

Add the sugar to a jug with the 150 g of water. Stir until it's fully dissolved, then add the yeast while crumbling it in. Let it rest — no need to stir. Tip: if the yeast turns into a paste instead of crumbling, I recommend throwing it out and getting another one.

Put the flour in a bowl and add the salt. Stir until combined. Once that's done, add the yeast mixture and keep stirring with a spoon.

Turn the dough out onto the counter and keep bringing it together with your hands. The best way is to keep breaking the dough with the palm of your hand so the flour hydrates completely (shown in detail in the video).

Once it comes together, knead for one or two minutes with back-and-forth motions. Then add the room-temperature butter and keep breaking and rejoining the dough so it works its way in well.

When it's well incorporated, keep kneading for five minutes with back-and-forth motions. Then cover with plastic wrap and let it rest.

Once the dough has risen, flour the counter and roll the dough out wide with a rolling pin.

In a bowl, combine the chocolate and the milk and melt in the microwave. Then pour it over the dough and spread it with a spatula. Tip: melt the chocolate little by little. It's best to microwave it for 30 seconds, then stir and put it back in the microwave for 10 seconds. Repeat the process until it's completely melted. If you don't have a microwave, you can watch my tutorial on melting chocolate in a water bath (bain-marie).

Once the chocolate is spread, roll up the dough from two opposite sides so the rolled parts meet in the middle. Once they meet, cut the dough down the middle to separate the rolls.

Place the rolls in a baking dish and cut off the ends that have no chocolate. Arrange the rolls, joining them into a ring shape, making sure the cut side faces down.

With scissors, make diagonal cuts in the rolls. Then pull each cut to the left or to the right, alternating. Cover and let rest for half an hour.

Bake at 180°C (350°F) for 30 minutes. Optional: before putting it in the oven, you can brush the ring with a mixture of one egg, milk, sugar and salt so it gets a nicer shine.
