Chocolate Bonbons

Ganache
Step by step

Chop the chocolate into small pieces (preferably dark drinking chocolate) so it melts more easily. Pour heavy cream into a bowl and then add the chocolate. Microwave for about 40 seconds. Stir and set aside for half an hour.

On a cutting board, chop the melting chocolate into small pieces and microwave for 30 seconds. Stir for one minute and microwave again for 20 seconds. Stir and repeat the process as many times as needed.

Arrange the foil candy cups and fill them to the top with the melting chocolate. Let them rest for a few minutes. Then pour the filling of the cups back into the bowl of chocolate. This will leave a fairly thick layer of chocolate on the walls of each cup. Tip: to recycle the leftover chocolate, pour it all onto parchment paper and wait until it sets for at least 30 minutes.

Put the chocolate ganache from the first step in the refrigerator for 10 or 15 minutes so it firms up. Then transfer it to a piping bag with a tip. Optional: you can whip the ganache so it gets even firmer.

Carefully peel the foil cups off the bonbons. Then fill them with the ganache. They'll be ready to eat.
