Coffee Cake
Covered in an incredible coffee glaze that you'll be able to use in any of your other creations, plus a super fluffy cake — this dessert becomes totally irresistible. For coffee lovers.

Coffee Glaze
Step by step

Butter and flour the cake pan. Set aside in the freezer.

Separate the egg whites from the yolks. Set aside.

In a bowl, add the yolks and beat them.

Add the sugar and keep beating.

Add the milk, the oil and the vanilla extract, and mix everything together.

Dissolve the instant coffee in water beforehand and add it to the mixture.

Add the flour and the baking powder, preferably through a sieve. Add the salt and beat as little as possible. Set aside.

Beat the egg whites, and as they start to thicken, begin adding the sugar.

Add cream of tartar or lemon juice to the meringue. (Optional)

Combine this meringue with the previous mixture using gentle folding motions. (Explained in detail in the video)

Pour into the pan and bake at 180°C (350°F) for 40 minutes. Set aside.

In a bowl, put the powdered sugar and, while stirring, gradually add the milk with the dissolved instant coffee, until you reach a nice thick consistency.

Cover the cake with this glaze and cut it into slices of whatever size you like.
