Coffee Cookies
Giant coffee beans? No! They're coffee cookies — nice and soft, super cute and very, very tasty. If you think yours won't turn out the same, you're wrong: watch my video explaining how to make them step by step.

Step by step

Dissolve the instant coffee in the water and set aside.

In a bowl, combine the room-temperature butter and the powdered sugar, and beat until you get a soft, creamy texture.

Add the egg and the dissolved coffee, and mix them in.

Add the flour, cornstarch and cocoa powder, preferably through a sieve. Add the salt and combine with a spatula.

Cover and refrigerate for at least half an hour.

Take pieces of the dough, shape each into an oval and place it on a baking sheet.

Make the line down the middle with a bench scraper or knife, and bake at 180°C (350°F) for 15 minutes.
