Coffee Cookies
Study night? Besides being delicious, these coffee cookies will keep you awake all night. Go ace that test tomorrow!
Ingredients

Step by step

In a small bowl, add the instant coffee, 2 tbsp of sugar and some water. Start whisking.

Keep adding water as needed until you get a very pale cream with all the instant coffee dissolved. (See the texture in detail in the video.)

In a bowl, add the room-temperature butter, the white sugar and the brown sugar. Beat until creamy.

Add vanilla extract, one egg, and the coffee mixture. Mix well.

Add the flour, baking powder and baking soda, preferably through a sifter. Beat again.

Roll the dough into small balls and place them on a baking sheet.

Coat the balls with brown sugar (optional).

Bake at 180°C (350°F) for about 12 minutes.
