With orange peels cooked until nice and soft, this marmalade creates a really interesting play of textures you won't regret trying.
Ingredients

Step by step
- 1
Juice all the oranges and set the juice aside.

- 2
With a spoon, scrape out the entire inside of the orange peels, including the white part.

- 3
Cut the orange peels into small strips.

- 4
In a pot, add all the squeezed juice, the orange peels and the sugar. The amount of sugar should be the same weight as the squeezed juice. For example, if we squeezed 400 g of juice, we'll need to add 400 g of sugar.

- 5
Cook over high heat until it comes to a boil, then lower to medium-low heat for 40 to 50 minutes.

- 6
Sterilize the jars by placing them in boiling water for an hour, along with their lids.

- 7
Cook until it reaches the desired consistency (keep in mind it will thicken as it cools), remove from the heat and transfer to the jars.
