Passion Fruit Cake

Cut the passion fruit open and scoop the pulp into a bowl. Then pour it into a blender with the water. Blend for 3 to 4 minutes.

Strain the fresh juice and remove the seeds with a spoon. Set aside both the juice and the seeds (don't throw them away).

Take the cake pan, butter it and flour it. Keep it in the freezer for now.

Add the eggs to a bowl followed by the sugar. Beat for 5 to 10 minutes. Add the oil.

Add the flour and the baking powder, preferably through a sieve. Add the salt, some of the passion fruit seeds and part of the fruit juice. Mix well, helping yourself with a spatula so no flour sticks to the sides.

Once the ingredients are combined, take the pan out of the freezer and pour the batter into it. Bake at 180°C (350°F) for about 45 to 50 minutes.

For the glaze, set a pot over medium heat and add the rest of the passion fruit juice along with the sugar. Let it heat up, stirring, until it comes to a boil.

Mix the cornstarch with water to dissolve it. Add it to the pot little by little while whisking, until it comes back to a boil. Then lower the heat to minimum and keep stirring for about two more minutes. After that, take the pot off the heat and let it cool to room temperature.

Once the cake is baked, let it cool to room temperature. Then unmold it and spread the passion fruit glaze over the top. Let it set and it's ready.
