Cut the passion fruit open on a board and scoop the pulp into a bowl. Then put it in a blender along with the water. Blend for 3 to 4 minutes.

Strain the juice into another container and separate the seeds. Set aside both the juice and the seeds (don't throw them away).

Take the loaf pan, butter it and flour it. Keep the pan in the freezer for now.

In a bowl, add the butter at room temperature along with the sugar. Beat well for several minutes. Then add the eggs one at a time, beating between each addition.

Add the flour and the baking powder, preferably through a sieve. Add a teaspoon of the passion fruit seeds. Mix well, helping yourself with a spatula so no unmixed flour is left on the sides.

Once the ingredients are combined, pour the batter into the pan. Tap the pan lightly on the counter to even it out and avoid air pockets inside. Bake at 180°C (350°F) for 45 to 50 minutes.

Once the baking time is up, take the loaf cake out and let it cool at room temperature for about an hour.

For the icing, pour the powdered sugar into a bowl and add a little of the passion fruit juice. Stir well. Adjust if needed until you get a thick consistency.

Pour the icing over the top of the loaf cake. If needed, spread it with a utensil. Let it dry for a few hours until the icing hardens, and it will be ready to eat.
