Almond Cookies

In a bowl, add the room-temperature butter and beat it until it reaches a creamy texture.

Add the sugar and beat again.

Add the vanilla extract and the egg, and mix them in.

Add the almond flour, the all-purpose flour and the baking powder. Mix everything together with a spoon.

Wrap the dough in plastic wrap and refrigerate for 1 to 2 hours.

Unwrap, shape the dough into small balls and place them on a baking sheet.

In a bowl, add an egg and some milk, and beat them together.

With a bench scraper or a knife, make the marks on the cookies and then brush them with the beaten egg and milk — this is what makes them shiny.

Place an almond on each cookie.

Bake at 180°C (350°F) for 20 minutes.
