Chop the almonds into small pieces. Set aside.

Add the eggs to a bowl and beat well for at least five minutes. While still beating, add the oil and then the sugar.

Mix the almond flour and the baking powder. Then sprinkle it gradually over the mixture while beating. Add the almond extract or whichever one you've chosen.

Place the paper liners in the muffin pan and fill them with the batter. Top with the chopped almonds.

Bake at 180°C (350°F) for 35-40 minutes. Once done, let them rest for at least 30 minutes.
