Coffee Muffins
This coffee muffin recipe combines a moist batter with a separate dry mixture, resulting in semi-marbled muffins that are very interesting both to look at and to eat.

Crack the eggs into a bowl and beat them; while still beating, gradually add the oil, then the water and the melted butter. Follow with the sugar.

Add the flour and baking powder, preferably through a sieve. Mix, then also fold in the walnuts and almonds cut into small pieces. Set aside.

In a bowl, combine the instant coffee, cocoa powder and sugar, stir and set aside.

Line a muffin pan with paper liners and fill each halfway with the batter, then add a few spoonfuls of the second mixture and finish filling the liner with more batter. Swirl each one with a small stick.

Bake at 180°C (350°F) for 35 minutes.
