Oreo Cupcakes

Separate the Oreo wafers from their filling. Set the filling aside and put the wafers in a food processor. Process and set aside.

In a bowl, add the flour and the baking powder, preferably through a sifter. Add the salt, the sugar and the processed wafers. Mix well.

Add the egg, the vanilla extract, the water and the oil. Whisk well to combine everything.

Line a muffin pan with paper liners, add the lemon juice to the batter and fill each liner.

Bake at 180°C (350°F) for 20 minutes.

In a food processor, add the whole Oreo cookies, process and transfer to a bowl; set aside.

In a bowl, beat the room-temperature butter until it reaches a nice creamy texture.

Add half of the powdered sugar, beat, then add the other half of the sugar. Beat again.

Mix in the cream cheese and finally the processed cookies.

Transfer to a piping bag with a tip and decorate the muffins.
