    Put the walnuts on a cutting board and chop them to your desired size.

    Add the room-temperature butter to a bowl and add the sugar. Cream the ingredients by beating them until they gain enough body. Use a spatula so nothing is left unmixed around the edges.

    Add one egg to the mixture and beat. Then add the second egg and beat again.

    Add the almond or walnut extract and the milk. Beat until combined.

    Add the flour, baking powder and salt to the mixture, preferably through a sifter. Beat until combined. Use a spatula to make sure everything is well incorporated. Finally, add the walnuts and fold them in.

    Once combined, spoon the batter into the paper liners in a muffin pan. Optional: place a walnut on top of the batter to make them look nicer.

    Bake at 180°C (350°F) for 30-35 minutes.
