Caesar Salad with Dressing and Croutons

Cut the crusts off the sandwich bread, then cut it into small cubes and put them in a bowl. Drizzle olive oil, salt and pepper on top.

Toss so the mixture gets absorbed evenly by all the bread.

Spread the bread cubes on a baking sheet and bake at 180°C (350°F) for about 15 minutes.

Peel the garlic and crush it with the knife, adding coarse salt on top, to work it into a paste.

Chop the anchovies as finely as you can and then mash them into a paste together with the garlic.

Transfer this to a bowl and add the yolks, the lemon juice and the mustard. Mix.

Keep stirring while you add the oil little by little. You can start with whichever oil you prefer.

Grate Parmesan cheese on top.

Remove the ribs from the lettuce leaves and cut them into smaller pieces.

To plate, spoon some Caesar dressing on the bottom, then the lettuce, the croutons on top and finish with more dressing.
