    Put the sugar in a pot with just enough water to moisten it, and cook over high heat until a syrup forms — it should not take on any color.

    Add the walnuts, turn off the heat, and start stirring until no liquid syrup remains.

    Once all the sugar has crystallized over the walnuts, turn the heat back on and keep stirring until you reach the desired color.

    Turn off the heat and keep stirring until they cool down.
