Caramel Cake
A very original recipe, super light and with very few ingredients. Making caramel cake only takes eggs and sugar — with just those two ingredients you get this exquisite dessert.

Separate the egg whites from the yolks.

Pour the sugar into a skillet, add just enough water to moisten it, and set it over medium-high heat.

Once the caramel reaches a dark color, add water. Pour it into the mold and swirl it around so it coats all the sides well.

In a bowl, add the egg whites and beat them.

Add cream of tartar or lemon juice (optional).

Gradually add the sugar while beating.

Transfer all the meringue to the mold, set it inside a larger one and fill with water, to cook it in a water bath (bain-marie).

Bake at 180°C (350°F) for 30 to 40 minutes.
