Break the chocolate into pieces and add it to a bowl along with the butter.

Microwave until melted — don't do it all at once, heat it in short bursts and stir, so it doesn't burn.

Add warm cream and mix until combined. Set aside.

Separate the yolks from the whites.

In a metal bowl, put the whites with the sugar and set it over a water bath (bain-marie) to help dissolve the sugar — don't heat it more than necessary.

Dissolve the gelatin in water beforehand, then heat it in the microwave until it's steaming and pour it into the chocolate mixture.

Once incorporated, add the rest and repeat.
