    Break the chocolate into pieces and add it to a bowl along with the butter.

    Microwave until melted — don't do it all at once, heat it in short bursts and stir, so it doesn't burn.

    Add warm cream and mix until combined. Set aside.

    Separate the yolks from the whites.

    In a metal bowl, put the whites with the sugar and set it over a water bath (bain-marie) to help dissolve the sugar — don't heat it more than necessary.

    Beat until you reach soft-peak consistency (shown in detail in the video).

    Dissolve the gelatin in water beforehand, then heat it in the microwave until it's steaming and pour it into the chocolate mixture.

    Add part of the meringue to the chocolate mixture and mix well.

    Add half of the chocolate mixture to the meringue and fold it in with gentle, sweeping motions.
