Bloom the gelatin by sprinkling it over a container holding five times its weight in (cold) water. Set aside.

Set a pot over medium heat and pour in the cream, the milk, the sugar and finally the cocoa powder. Stir constantly until all the ingredients dissolve (avoid letting it come to a boil). Once dissolved, take the pot off the heat and let it rest for 30 minutes to an hour.

Microwave the bloomed gelatin for about 30 seconds (it should be steaming when you take it out of the microwave). Pour the hot gelatin into the mixture and stir very quickly.

Pour the mixture into the serving containers and put them in the freezer for 30 minutes to an hour. Then move them to the refrigerator.

Eat it straight from the container or turn it out onto a plate. Top with chocolate sauce or whichever sauce you prefer.
