Separate the whites from the yolks of all the eggs (shown in detail in the video) and set aside.

Warm the butter in the microwave for a few seconds so it's easier to work with and spread it over the pan we'll use for the Parisian flan.

Then line the pan with parchment paper and press so it takes the shape. Trim any overhanging edges with scissors. Spread a little more butter over the paper. Store in the refrigerator.

In a bowl, add the yolks and beat them. When they gain volume, add the cornstarch and beat until combined.

In a pot, add the milk, the cream and the sugar. Set over medium heat and whisk nonstop to keep it from burning. When the milk boils, take it off the heat.

Temper the yolks by adding the boiled milk little by little, to keep them from curdling (shown in detail in the video). Don't stop whisking at any point.

Put the mixture over high heat and stir constantly until it comes to a boil. Then lower the heat to the minimum and stir for two more minutes. Add vanilla extract (optional).

Remove the mixture and pour it into the pan from the beginning. Bake for fifty minutes.

Take it out of the oven and let it cool for about an hour. Your Parisian flan is ready.
