Starting with the caramel, place a skillet over medium heat and add the sugar, spreading it evenly across the pan. Add a small amount of water just to moisten it and leave it on the heat until it bubbles. Don't stir.

When the caramel is ready, pour it into the ramekins and spread it so it covers the entire bottom. To check if the caramel is ready, dip a piece of paper into it — it should come out with a copper color.

For the flan, put the eggs in a bowl, then add the sugar and the milk. Whisk or stir until well combined. Tip: use ingredients at room temperature. This will help the sugar dissolve.

Pour the mixture into each ramekin and place them in a baking pan or similar flat container.

Fill the pan with water until it covers half or ¾ of the ramekins. Bake at 180°C (350°F) for about 45 minutes.

Once the time is up, remove from the oven and let it rest at room temperature. Once cool, store in the refrigerator.
