Coconut Alfajores
Coconut with dulce de leche — one of the best combinations in baking. I'll teach you how to make the coconut cookie rounds, which you can then use to build alfajores with whatever filling you like.

In a bowl, add the eggs and the sugar, and beat until the mixture gains a lot of volume.

Add the shredded coconut; mix first with a spoon and then with your hands.

Cover and refrigerate for half an hour.

Shape the cookie rounds with the help of a cutter, place them on a baking sheet, and bake at 180°C (350°F) for 20 minutes.

Transfer the dulce de leche to a piping bag and assemble the alfajores with the cookie rounds.
