Fill a large pot with water and bring it to a boil. Once the water is boiling, put the jar and its lid in separately and leave them for about 5 minutes. Let them air-dry on their own, without using anything to dry them.

Set a pan over medium heat and pour in the heavy cream and the sugar. Stir for a good while until it starts to reduce.

Once the cream and sugar are well combined, add the coffee and stir until it reduces and thickens. Tip: to check whether the jam has reached the right stage, drop a few drops of the mixture into a container of water. If the drops dissolve in the water, the jam isn't ready yet. When the drops fall and hold together, it has reached its point.

Once the jam is ready, turn off the heat and pour it into the jar. Let it rest for an hour at room temperature and then put it in the refrigerator.
