Heat the milk with a cinnamon stick in a pot until it's close to boiling, then cover and remove from the heat.

Separate the yolks from the whites and, in a bowl, mix the yolks with the sugar, then combine with the cornstarch.

Add the milk to this mixture while stirring.

Pour the mixture into a pot and heat over medium heat until it comes to a boil, then cook for 2 more minutes over low heat and remove.

Serve into the ramekins, cover with plastic wrap pressed against the surface and let it rest for an hour at room temperature, then move it to the refrigerator.

Cover with sugar and torch it. (Optional)
