Dulce de Leche Alfajores
These alfajores will turn out even better than store-bought, and with a good dulce de leche you won't be able to stop eating them. I'll also show you how to coat them in chocolate — you can do it with either white or dark chocolate.

In a bowl, add room-temperature butter and the sugar. Beat until creamy.

Add vanilla extract, one egg and the honey. Mix again until combined.

Add the flour, cornstarch, baking powder and baking soda, preferably through a sifter. Finish combining, this time with a spatula to scrape the flour stuck to the sides. Don't overmix, so the cookie tops don't turn out hard.

Wrap the dough in plastic wrap and refrigerate for about an hour.

Unwrap the dough, break it apart and bring it back together, without kneading too much.

Roll out the dough with a rolling pin, always adding flour underneath and on top.

Cut out the cookie rounds with a cutter and place them on a baking sheet.

Bake at 180°C (350°F) for 12 minutes.

Fill a piping bag with thick dulce de leche (pastry-grade) and assemble the alfajores (see the video for more detail).
