Almond Cake

Step by step

Butter and flour the cake pan, and set it aside in the freezer.

Cut the almonds into small pieces and set aside.

Separate the egg whites from the yolks, add the sugar to the yolks and beat.

Add the almond flour and mix it in with a spatula.

Add milk if needed, and set aside.

In a bowl, beat the egg whites until they no longer move, then fold them into the previous mixture with gentle folding motions. (Technique shown in detail in the video)

Pour into the pan, scatter the chopped almonds on top and bake at 180°C (350°F) for 35 minutes.
