Grapefruit Brownies

Take a baking dish and coat it with butter.

Cut two pieces of parchment paper the same size as the dish. Place the first layer of parchment paper in the dish and press so it sticks. Butter this layer of parchment paper and then add the second one. Press so it sticks. Then butter it and put it in the freezer.

Squeeze a grapefruit to extract all the juice. Set aside.

In a bowl, add the room-temperature butter, the sugar and the zest of half a grapefruit or a whole one, depending on its size (wash the fruit well first). Beat for 5 to 10 minutes.

Add one egg and beat. Add the next egg and beat again until nice and creamy.

Add the flour and the baking powder, preferably through a sifter. Add half of the grapefruit juice. Beat until combined, using a spatula to make sure nothing sticks to the sides. Take the dish out of the freezer and pour the batter into it. Tap the dish against a surface so the batter spreads out evenly and no air pockets remain in the mixture.

Bake for about 30 minutes at 180°C (350°F). Then let it cool at room temperature. Take it out of the dish and remove the parchment paper. Tip: to check whether it's done, poke it with a wooden stick or knife and make sure it comes out just moist. If, on the other hand, it has batter on it, it's not ready yet.

For the glaze, put the powdered sugar in a bowl and add a little of the grapefruit juice. Stir. Adjust by adding the grapefruit juice little by little until you get a nice thick texture. Pour it over the surface of the cake and spread it out. Let it rest for 2 to 3 hours. Then cut the brownies into squares.
