Pour the milk into a pot and heat it until it's close to boiling. Remove from the heat.

Add lemon juice or vinegar and stir. Cover and let it sit for 30 minutes.

Strain through a clean cloth to separate the liquids from the solids.

Blend the solid part with a pinch of salt, adding milk little by little until you reach the consistency you want.

Transfer to a container and keep it in the refrigerator.
