Dust powdered sugar over the mold you're going to use. Set aside.

In a pot, add the very cold water and sprinkle the gelatin evenly over it. Let it bloom for at least 30 minutes.

Set over medium heat until it melts, then add the sugar and cook until it's boiling. Transfer to a bowl and let it rest at room temperature for at least 30 minutes.

Whip for 10 minutes, then pour into the mold. Spread the mixture out and sift powdered sugar over the top.

Keep it in the refrigerator for several hours.

Release it from the mold, cover any sticky spots with powdered sugar and cut the marshmallows. Coat all the cut sides with powdered sugar so they don't stick together.

Put them all in a bowl, dust powdered sugar on top and toss.
