Homemade Meringues
Learn the trick only Fede's cooks know! How to keep them from turning out soft or gummy inside. Making homemade meringues is super easy, and it's a treat the little ones will love.
Ingredients

Step by step

Separate the whites from the yolks of all the eggs.

Put the whites in a bowl and beat them.

When they gain some volume, add cream of tartar or lemon juice (optional).

Gradually add the sugar while beating.

Transfer the meringue to a piping bag fitted with a tip and pipe the meringues onto a baking sheet lined with parchment paper or a silicone mat (see the video for the technique to make them perfect).

Bake for 2 hours at 60°C (140°F).
