Put the dry ingredients in a bowl: sugar, salt, baking powder and flour. Mix until the ingredients are evenly distributed.

Then add one egg and part of the milk: it can be half or ¾ of it. Mix with a whisk and keep adding the rest of the milk little by little to avoid lumps. Then add the oil.

Once the batter is smooth, place a skillet over medium heat and add a bit of butter, letting it melt and spreading it across the whole skillet. Tip: don't skip the butter step — without it, the pancakes will come out flatter, with less flavor and less appealing to look at. You can use it for every pancake (recommended) or every other one.

Pour one ladleful of the batter into the skillet and don't move it until it cooks. When the edges of the pancake look golden, it's ready to flip. Once flipped, cook for one or two more minutes.

Done! You can serve them with honey, butter, fruit, syrup, ice cream or dulce de leche.
