Pumpkin Bread
If you like baking bread you're going to love this one — the pumpkin gives it a naturally sweet flavor that tastes incredible.

Step by step

Peel the pumpkin and cut it into medium pieces.

Put them in a pot, cover with water and add salt.

Set the pot over high heat and once it boils, let it cook for 15 minutes. Poke the pieces to check if they're soft, and once they're done, drain the water.

Transfer the pumpkin to a bowl and mash it with a potato masher.

Add the sugar and the salt and stir well. Let it cool at room temperature for at least half an hour, until it's just warm.

Crumble the fresh yeast into the bowl, add the egg and mix it in.

Gradually add flour, mixing with a spoon, until you get a dough that doesn't stick to your hands.

Turn it out onto the counter and keep kneading by hand until fully combined.

Add room-temperature butter and work it into the dough, first breaking it up and then kneading.

Place the dough in a bowl, cover and let it rest for at least 30 minutes.

Then cut the dough into pieces and shape each one into a tight ball — this helps them keep their shape while baking. (The shaping technique is explained in detail in the video)

Place them on a baking sheet, cover and let them rise until doubled in size.

Brush with water and sprinkle seeds on top. (Optional)

Bake at 180°C (350°F) for 50 minutes.
