Lemon Muffins

Grate the zest of one lemon into a bowl. Add the sugar and the eggs. Beat for several minutes to work air into the mixture.

Add the flour, the salt and the baking powder, preferably through a sifter. Beat until well combined. Use a spatula to scrape down the unmixed flour from the edges.

Add the milk and keep mixing. Then add the juice of half a lemon and mix it in.

Place the paper liners in a muffin pan and fill each one with the batter.

Bake at 180°C (350°F) for at least 35 minutes. Then let them cool.

In a container, put the powdered sugar and add lemon juice little by little while stirring until you get a thick consistency.

Decorate the muffins with the glaze and let it set for an hour. Done! Your lemon muffins are ready to eat.
