Panna Cotta

Sprinkle the gelatin evenly over 35 g of cold water and set aside.

In a pot, add the cream, the milk and the sugar. Heat over medium heat until all the sugar has dissolved. Remove from the heat and let it rest for 30 minutes.

Add the vanilla extract and the gelatin, first heating the gelatin in the microwave until it steams. Mix well and pour into the glasses.

Place in the freezer for 3 hours, then move to the refrigerator.

Remove the leaves from all the strawberries, cut them into tiny pieces and put them in a pot.

Add the sugar and cook over high heat, stirring every few minutes. Once it's boiling, leave it on the lowest heat until it reaches the consistency you prefer. Then remove from the heat and let it rest until it cools down.

Pour the strawberry reduction over the glasses with the previous preparation.
