In a food processor, add the ricotta and process it so it loses volume. Then add the sugar and keep processing until it has a mousse-like consistency. Optional: if you don't have a food processor, you can also make it with a mixer, hand-held or electric, but keep in mind the texture will be different.

At this point, the ricotta cream is ready. Next, if you want to give it a special flavor, add cocoa powder to the processor, brewed coffee and more sugar, so the mixture doesn't lose sweetness because of the coffee. Process well.

Serve in a container and tap it gently so the ricotta cream settles. Press plastic wrap onto the surface and store it in the refrigerator.
