Walnut Flan

Starting with the caramel, place a skillet over medium heat and add the sugar, spreading it evenly across the surface of the pan. Add a small amount of water (just enough to moisten the sugar) and leave it on the heat until it starts to bubble. Don't stir.

Once the caramel is ready, pour it into the ramekins and spread it so it coats all the sides. To check if the caramel is at the right point, dip a piece of paper into it — it should come out with a copper color.

For the flan, put the room-temperature milk, the sugar, the eggs and the walnuts in a blender. Blend for a few minutes.

Pour the mixture into the ramekins and place them in a flat baking pan.

Fill the pan with water until it covers half or ¾ of the ramekins. Bake for 45 minutes at 180°C (350°F).

Remove from the oven and let it cool at room temperature. Then refrigerate.
